Mandy's Meatloaf Recipe

I made the most amazing meatloaf last night. No really. It was amazing. I'm not usually a big fan, but this was moist, flavorful and insanely delish. The only thing I'm going to do differently next time is add shredded carrot.

Mama Mandy's Meatloaf

1 lb ground beef
1 onion, diced
3 T butter
1 c. milk
1 egg
1 1/2 c. bread crumbs
salt
pepper
garlic powder
1 tsp. thyme

Topping:
1/2 jar Trader Joe's Tomato Chutney
1 T brown sugar
2 T ketchup


Preheat oven to 350. In a pan, saute the onion with salt, pepper and a dash of garlic powder. Cook until onions are clear.

In the meantime, beat the egg and milk together and pour over ground beef. Add salt, pepper, thyme and bread crumbs. Add the cooked onions and mix well.

Put the meat mixture in a loaf pan. Whisk the topping ingredients in a small bowl and pour over the top of the meatloaf. Bake for one hour. Enjoy!!

the real question is, did you mush it all together with your bare hands?!?! sounds delish ... just made meatloaf the other night - might have try your twist on it ... oh, and dig the name too!

This sounds pretty good, never been a huge fan of meatloaf, but I like finding different twists on it. So this summer I found one....
1 lb of hamburger
1 cup of oats
1 egg
Chopped onion or scallions
4-5 strips cooked bacon
1/2 - 1 cup cheese (I used cheddar)
1-2 diced Romano tomatoes

Mix it all together...
I added salt/pepper, a dash of garlic YUM
Topped with ketchup of course

Danielle - There's no way in HELL that I'd mix it with my bare hands. EWWWW! I used a spoon, thank you very much. lol


Anonymous - If I didn't think it was amazing, I wouldn't post the recipe. Can you imagine? "I just made the most mediocre dinner ever! I simply MUST share the recipe with you."

Elisa - I love the idea of adding cheddar. (Chad will love the idea of adding bacon. lol)
