I didn't have a can or box, so I grabbed a quart of those tomatoes I canned a couple months ago and set about googling. Combining a few recipes I came up with this yummy and low calorie version of my favorite soup.
Low Fat Tomato Soup
You'll need:
1 quart whole tomatoes (this is about two cans of stewed tomatoes or five large fresh tomatoes), chopped
1/2 onion, chopped
5 cloves garlic, chopped
1 can 99% fat free broth
1 T dried basil
salt
pepper
1 tsp sugar
1/4 c. dry white wine
1 T cream (optional)
1. Pour the wine in a large pot. Bring to a simmer and add garlic, onions, basil, salt and pepper.
2. Simmer until onions are soft.
3. Add tomatoes, broth, and sugar. Simmer for 40 minutes.
4. Using a hand blender, blend until smooth. (If you don't have a hand blender, go grab one. They're $10 at Wal Mart. Otherwise pour the hot soup into a blender and smooth it out that way.)
5. Ladle into bowl and blend in cream if you're going that direction. If you decide not to add the cream, this lovely soup is only 78 calories and one gram of fat per one cup serving. Seriously.

I LOVE YOU.... how do people not know that you MUST have Grilled Cheese with tomato soup?
And yes Grilled Cheese is capitalized!
