Easy Southwestern Pork Chops
4 pork chops
1 T butter
1 T olive oil
1 T flour
1 can sliced stewed tomatoes
1 can green chilies
1/2 onion, chopped
salt
pepper
garlic powder
chili powder
cumin
1. Melt the butter with the olive oil in a large pan. Add the pork chops and brown on both sides. Remove from pan.
2. Drain most of the oil out of the pan. Add flour stirring it around to form a thick paste. Place pork chops back in pan and add 1/4 c. water. Sprinkle salt, pepper and garlic powder to tastes on the chops. Cover and cook for 15 minutes.
3. Remove the lid and add the tomatoes, green chilies, onion and a pinch or two of the cumin and chili powder. Gently stir, lifting the chops to allow the liquid to get under the meat. Cover and simmer for ten minutes or until the pork chop is cooked all the way through.
4. Serve with the "sauce" over the top.
I swear it's as delicious as it looks. Oh...and that side dish? Stay tuned.

Not unapproved. I had a half and called it good at 6 pts.
To be honest, I was surprised at how delish it turned out. I really liked the flavor. Chad wants me to try the same dish but using chicken.
