As we were planning the menu for our New Year Eve's dinner, one item kept popping up in my girlfriends' emails.
At first, it was a joke. "You should make corn fritters. Ha. Ha."
Then, it was a challenge. "I'm going to make corn fritters and they'll be awesome."
So, on the last day of the year, I gathered my ingredients and went to my friend's house where I separated eggs, whipped them within an inch of their lives and folded in sweet corn. I dodged spitting oil as I plopped teaspoons of batter into a frying pan. I carefully flipped them over and then, slid them on a plate.
And you know what?
They were divine.
Sweet with a hit of onion, the corn burst in my mouth as soon as I took a bite. We wrapped each fritter in a basil leaf and the combination was enough to send me into food nirvana.
They were not easy to make.
They would not be something I'd make with Joseph.
They were not something I would ever make for a preschool potluck.
However...with champagne and good friends?
Bring on the fritters.
