We just got back from a harvest dinner with my garden group. I'll post more on that later. What I want to post now are the recipes for my contributions. Without further ado, I bring you...
Apple Crisp
1 c. flour
1 c. brown sugar
1 c. oatmeal
1/2 c. butter, melted
3 c. apples, cored, peeled and sliced
1/2-ish c. dried cranberries
1/2 c. sugar
1-2 tsp. cinnamon
Preheat your oven to 350. Grease a baking dish.
Combine flour, brown sugar, oatmeal and butter in a bowl until crumbly. Press half the mixture in the bottom of the baking dish.
Mix the apples, dried cranberries, sugar and cinnamon. Dump on top of the crumb mixture.
Pour the rest of the crumb mixture on top and bake for 40-45 minutes or until golden brown.

Roasted Veggies
1 potato, cubed
1 sweet potato, cubed
2 carrots, sliced
2 celery stalks, sliced
2 zucchinis, sliced
2 yellow squash, sliced
1/2 onion, diced
1/2 c. olive oil
salt
pepper
fresh rosemary
Toss everything together and pour into baking dish. Bake at 350 for 50-60 minutes or until the veggies are tender.
