Thank God for my crockpot.
There are three factors that have been working against a non-delivery dinner:
1. Heat - It's been so dang hot that the last thing I want to do is run the oven or even cook on the stove top. While grilling is an option, there's...
2. Elizabeth - The little darling eats her dinner between 5 and 6. Normally, this wouldn't be such a big deal since I could always direct Chad's cooking, but...
3. Work - Chad hasn't been getting home from work until between 6:30 and 7:30.
All of the above make dinner very difficult. Hence, the crockpot.
Fortunately for me (and the fam), there's Stephanie O'Dea. I know I've mentioned her before, but her site deserves a second mention.
Her blog is an amazing font of crockpot recipes. Plus, she's kind enough to answer crockpot questions.
So far this week, I've made her shepherd pie and lasagna. Well, the lasagna was my recipe, her cooking instructions. I'm able to "cook" dinner while the kids are down for their nap. I clean the kitchen and then, when dinner ends and the evening madness begins, all we have to do is put a few plates and forks in the dishwasher.
I can't wait to try something else. Maybe a little dessert?

What I love about her blog - besides the verdict - is that she shops the same places I shop. Makes it so much easier to follow her recipes!
