Lazy Chicken

I was intrigued by a recipe on my new favorite crockpot blog. (Because I read oh-so-many crockpot blogs...) I had some chicken breasts in the freezer, so I decided to give it a whirl.

Lazy Chicken

4 frozen chicken breasts
1 jar spaghetti sauce

Put it all in your crockpot and cook for eight hours. Serve on pasta.

Things didn't start off too well. I went to grab a jar of sauce out of the cupboard and, there was NO SAUCE. This did not bode well for several reasons: a) I needed the sauce for the recipe; b) I always have sauce; and c) I haven't made pasta in a couple weeks so the question remains what happened to the sauce? I did, after a series of G-rated cursing ("dang nab it" ) discover that Chad's been using it for his Italian omelets.

Instead of a jar of sauce, I dumped in a can of stewed tomatoes, a small can of tomato sauce a couple cloves of garlic and a few cubes of frozen basil. Becky brought home some spaghetti sauce after her work out and added a half a jar.

By the time I got home, it smelled amazing. Walking in the door was like walking into a little Italian restaurant. The warm scents of tomato and garlic made my mouth water. When I looked in the pot, the chicken looked lonely so I added a half a bag of frozen bell peppers.

Just before dinner, we decided to serve it on rice instead of pasta. The boys (Benny was over) and Chad loved it. Becky said it was good, just a bit bland. And I, well, I decided it would have tasted much better as a sandwich.

She has another, similar one that I want to try...I'm intrigued and, oddly enough, have all the ingredients on hand.
