Yesterday, as I previously mentioned, was a scorcher. (I figure if I say it often enough, the reality will sink in to all of you who don't worry about such heat-infused days.) The last thing I wanted to think about was dinner, so...at Chad suggestion, the brilliant man, I pulled out the crockpot and made BBQ beef sandwiches. Coupled with Chad's homemade potato salad, it was a delicious, easy meal that didn't heat up my kitchen.
Bangin' BBQ Beef Sandwiches
1 Roast - Ours was about two pounds.
1 Bottle BBQ sauce
1/2 Bottle TJ Sweet Chilli Sauce (totally optional, but gave our sandwiches a bit of a kick)
1/2 c. Water
Put everything in the crockpot on high for six hours. After it's finished, remove the roast, slice it up and mix it with the sauce. Serve on toasted buns with cheddar cheese. Be prepared to guiltily want seconds.
