I actually attempted a recipe tonight. I read a great article in Real Simple about healthy comfort foods. The homemade mac and cheese with cauliflower seemed like a great way to sneak some veggies to Joseph in one of his favorite meals.
Warning: In spite of the tag line "healthy", this recipe is in no way, shape or form low fat and will probably not grace our tables more than once a month once I'm not pregnant.
Let's just say it was addicting. So creamy and yummy. Joseph ate a little, but sadly kept insisting that it wasn't mac and cheese. (Too many Kraft lunches in our house, obviously.)
Side note: Danielle - this would make a great mac and cheese for Laners. Especially with the cauliflower and the multigrain pasta.
