Casserole Cookoff Recipes

Have you ever had one of "those" morning?

Mornings that start with a sprint and end with you showing up at work only to have a co-worker inform you, after two hours, that your shirt is on inside out?

Or is that just me?

On the plus side, this is my Friday and I'm looking forward to a long weekend of pickling, relishing and casserole cooking.

Which brings me to...

Casserole recipes.

I'm entering the Second Annual Casserole Cookoff hosted by our friends Sarah and Josh.  From what I understand, this is a fierce competition with participants who own three hundred cookbooks at their disposal.  (You think I'm engaging in blatant hyperbole. I'm not.)  There will be people in attendance who are breaking out the tater tots and the cream of mushroom soup, hoping to sway the judges with old school finesse.

And there will be me.

The Mandyland kitchen archives contain few casseroles.  Mostly because a) to make them taste good, they need four cans of cream of something soup and seven pounds of cheese, which is counter productive to my weight loss goals and b) well, there is no b. "A" about covers it.

So I'm reaching out to you, dear readers, to send me a recipe for casserole goodness so tasty, so amazingly tempting, so ridiculously addictive that I will be declared the Casserole Cookoff Queen.

Bonus points if it's healthy.

Double bonus points if it's a dessert casserole.
