Faux-jitos Recipe

Ah dah-claire...It's so hot in heyah, I may just melt.

Phew!  It's exhausting, talking in a Southern accent.  I'm just going to go with my normal West Coast dialect now.

Like, it was totally so, like, hot here, that I, like, decided to mix up a totally rad bevvie.

Did I just age myself with my "valley" talk?

On to the point of this post!

While I love a good mojito, apparently you're not supposed to sip them all day long while nursing a baby.  Go figure.  Thankfully, I found a great faux-jito recipe on The Jet Set.  While she calls it the Driven Mojito, I'm going to stick with my name...'cause I'm orginal like that.

Faux-jitos

Simple Syrup
Mint Leaves
Club Soda
Lime

First off, make your simple syrup by boiling equal parts sugar and water.  A little tip from me?  Two two cups sugar and two cups water.  Pour it in a large canning jar and stick it in the fridge for spur of the moment drinks.

With your simple syrup done, cut a lime in quarters.

Toss your mint leaves in a glass. (Three or four will do ya.)  Squeeze a couple lime quarters into the glass and then toss the lime in with the mint.  Muddle.  (Which means lightly smash.)  Add about 1.5 T simple syrup - more if you like your dinks sweet.  Muddle.  Love that word.  I like it so much, we made it the Word on the Street.

Cover the whole muddled mess with ice and pour club soda to the top.

Congratulations!  You've just made a refreshingly delicious faux-jito.

Or, as Chad said, a mint-flavored Sprite.
