I need to come up with a witty name for this one. Suggestions?? It's super yummy, super quick and fairly light. I came up with it after combining several recipes for similar dishes.
Dressing:
4 T Peanut Butter
4 T Rice Vinegar
2 T Brown Sugar
2 T Soy Sauce
1/2 tsp Ground Cayenne Pepper (makes it spicy, so adjust according to your tastes)
Salad:
1 bag Cole Slaw Mix
1/2 c. Peanuts
1 T Olive or Seasame Oil
1 can Sliced Water Chestnuts
1 pkg Ramen Noodles
1 can Chicken
1 small handful chopped cilantro
Instructions:
In a small bowl, whisk all the ingredients for the dressing until smooth. (Or somewhat smooth if you're using chunky peanut butter.) Set aside.
In a skillet, heat up the oil. When it's hot, toast the peanuts and raw Ramen noodles. (Throw away that sodium-laden seasoning packet!!)
While that's toasting, dump the cole slaw mix, water chestnuts, chicken and cilantro in a large bowl. Add the toasted noodle/peanut combo. Toss with the dressing.
