Low Fat Egg Roll Recipe

I used to make these all the time, but for some odd reason haven't done so in quite a while. This is a simplified Weight Watchers recipe. For all those counting, these suckers are one point each.

One Point Egg Rolls - Simplified

1 pkg cole slaw mix
1 pkg egg roll wrappers
1 T grated ginger
2 T soy sauce
2 T vinegar
Pam*

Preheat oven to 350.

Spray cookie sheet with Pam.

Empty the package of cole slaw mix into a microwave safe bowl. Nuke for 4 minutes or until wilted. Drain excess water. Add the ginger, soy sauce and vinegar. Mix until the slaw is coated.

Place a wrapper on a clean, dry surface. Put one heaping Tablespoon of the slaw mix in the middle. Roll like an egg roll and place on cookie sheet.

Once your egg rolls are lined up, spray them with Pam and bake for 25 minutes or until they're golden brown.

Enjoy plain or with your fave dipping sauce.

*I actually used olive oil in this spritzer.
