Marvelous Mango Chicken Recipe

We had Ken and Sue over for dinner tonight. We planned on grilling chicken, making potato salad and roasting corn. As I was getting everything together, I came across a jar of mango chutney that I bought at Trader Joe's. I thought we could get a bit creative with our chicken so decided to use it instead of BBQ sauce. The result? Seriously amazing chicken.

Marvelous Mango Chicken

4 skinless, boneless chicken breasts - washed
1 jar Trader Joe's Mango Chutney
olive oil

Place each piece of chicken in the middle of it's own square of tinfoil. Cover each breast (that sounds bad) with 1/4 the jar of chutney. Drizzle a little olive oil over the top of the chutney. Wrap the chicken and cook on the grill for 30 minutes. (Times may vary depending on how hot your grill is.)

That's it! Super easy and so yummy that Chad can't stop eating it. I suppose the whole thing could also be done in a crock pot or oven. It would also present better wrapped in a banana leaf.
