Before I forget, here's the recipe for the quiche I made for Easter:
1 pie crust
4 beaten eggs
1 1/2 c milk (I used 1%, but you could go buck wild and use half and half or cream)
1/4 c diced yellow onion (or green, I imagine)
salt (omit if you're adding ham or bacon)
pepper
dash of nutmeg
1 1/2 c total of shredded sharp cheddar and havarti cheese
1 T flour
Fillings:
2 shredded carrots
1 c diced ham
1/2 c chopped spinach
handful of cherry tomatoes cut in half
Put the pie crust in a deep pie dish. Cover with a double thickness of foil and put in a 450 oven for 8 minutes. Remove foil and bake an additional 4 or 5 minutes or until the pastry is dry.
Reduce the oven temperature to 325.
In the meantime, toss the cheese with the flour and set aside.
Stir together the eggs, milk, onion, salt, pepper and nutmeg. Add whatever fillings you'd like and the cheese. I did one vegetarian and one in which I added ham. I topped mine with the cherry tomatoes and then baked it for 40-45 minutes or until knife comes out clean when inserted in the middle.
