Knowing that we'd be in the yard all day, I decided to make a pot roast for dinner. Chad bought one on a whim about three months ago when Von's was having an awesome sale and it's languished in our freezer ever since. We kept meaning to cook it up, but it seems a cool weather food and well, the weather hasn't really been cool.
I know that everyone probably has their own fave pot roast recipe, but here's mine in all it's simplistic glory:
1 pot roast
1 onions, diced
4 carrots, thickly sliced
4 potatoes, cut in large chunks
1 c. water
1 pkg onion soup mix
pepper to taste
Dissolve the onion soup in the water. Set aside. Dump the onions, carrots and potatoes into your slow cooker. Place your frozen slab of beef on top. Pour the onion soup over the top. Put the lid on, set the cooker for 8 hours and go play.
