Why I don't bake...
In an effort to find a fun pumpkin recipe that takes less time than a crustless pumpkin pie, provides the same sweet factor and is low point I came across this recipe:
0 Point Pumpkin Pie
1/2 c. pumpkin
3 T. Splenda
Pumpkin Pie Spice
Mix it all in a bowl and microwave until warm. Serve with whipped topping.
I made it and couldn't get over how God-awful it was. Seriously bummed out, I went to put everything away and realized that I'd misread the 3 T. as 3 teaspoons. Ahhhhh....that would be why it wasn't sweet at all.
Now do you see why Saturday's banana bread was such an accomplishment?
