I wanted to make something yummy for Stroller Strides tomorrow without totally destroying my attempt at Weight Watchers. I hit up hungrygirl.com and did a search for pumpkin recipes. I found this one.
I didn't have a chocolate cake mix handy, so I substituted a yellow cake and added nutmeg and cinnamon. My scoops made 24 muffins which makes for a 2 point muffin.
The result? Yummy, pumpkin muffins that are a little chewy, very moist and too delicious to be low fat.
Oh and the best part? No measuring required. That's my kind of baking!
