In a haze of hunger, my mind blurry with shouts of "Mommy!! ME help cook!!!" and a skipped trip to the grocery store, I came up with a recipe that is not only original, but healthy, yummy and easy. Yes. I am proud. It was eaten so fast, I didn't have time to take a picture!
Mama Mandy's Zucca Verdura*
4 Tilapia fillets
1 c. uncooked couscous
1 can stewed tomatoes
4 cloves garlic
1 zucchini
1 yellow squash
1 sweet onion (I used Walla Walla)
6 c. tomatoes (I used both Romas and Cherry)
1/2 c. fresh basil
salt and pepper to taste
First things first, preheat your oven to 400.
Slice the squash and zucchini into 1/2 inch slices. Slice the onion into 1 inch slices. At this point you have two choices...grill the veggies on a George Foreman grill or BBQ or saute with a splash of olive oil until the onions are clear. I used the Foreman to save on the oil. Drain the can of tomatoes (saving the juice) and empty into a food processor. Measure out the tomato juice and top with water until it equals one cup. Put in medium saucepan and bring to a boil. Add couscous, turn off heat and cover.
Add the fresh tomatoes, garlic and basil to the stewed tomatoes in the food processor and chop until it's the consistency of salsa. Set aside.
By this time your veggies should be close to done. Take them off the heat and put aside.
Cover the bottom of a cake pan with the cooked couscous. Lay the tilapia fillets on top. Cover with the grilled vegetables and then dump the "salsa" mixture over the whole thing. Pop in the oven until the fish is flaky. Serve with a sprinkling of Parmesan and enjoy!
